Held in a private dining room, we will be hosting an evening of custom pairings that will guide you through the distinct characteristics of each terroir and grape variety of the featured wines. FIRST COURSE

Ora King Salmon, Smoked Shoyu, Avocado, Caviar. Paired with Gaja, Langhe Rossj-Bass 2018 (Chardonnay and Sauvignon Blanc).

SECOND COURSE

Fresh Skate Wing, Caper, Garlic and Hazelnut Brown Butter. Paired with Gaja, Ca'Marcanda Toscana Vistamare 2018 (Chardonnay, Sauvignon Blanc, Vermentino, and Viognier).

THIRD COURSE

Lacquered Aged Moulard Duck and Foie Gras, Onion Brulé Crostini Seared, Grilled Belgium Endive, Blood Orange Reduction, Truffled Honey Nage. Paired with Gaja, Ca'Marcanda Bolgheri Magari 2019 (Cabernet, Sauvignon and Merlot).

FOURTH COURSE

Slow Braised Short Ribs, Sweet Corn and Green Apple Risotto, Red Wine Reduction, Charred Caulilini. Paired with Gaja, Barolo Dagromis 2018 (Nebbiolo).

FIFTH COURSE

Dark Chocolate Tart, Zabaglione. Paired with Gaja, Brunello di Montalcino Pieve Santa Restituta 2014 (Sangiovese Grosso).
